Shredded Fiesta Chicken (Slow Cooker) under 500 cals per serving

I came up with this super simple recipe when I started our 'clean eating' health kick. Since then, we have strayed away and haven't been eating as healthy...mostly do to lack of proper grocery shopping and busy schedules...I have been slacking at meal planning. I plan on getting us back on the clean,healthy track again after this week. Avoiding processed food as much as possible, and keeping dinners under a certain amount of calories is really alot easier than you think. The key is just planning ahead of time, and finding yummy recipes that don't taste like health food. This recipe is really tasty. You can serve it over brown rice or wrap it up in a whole wheat tortilla. It is less than 500 cals per serving, even when served with rice or tortilla.

Ingredients:
3-4 boneless skinless chicken breasts
1 cup frozen corn
1 can black beans
2 cans rotel
1 package taco seasoning
1/2 chicken broth

You can add more or less veggies, depending on your liking.


Add all ingredients to Slow cooker. Cook on low for 4 hours. Shred chicken & return to slow cooker. Cook additional 30 minutes or until ready to eat. BAM!!!!



I used the leftovers to make Nachos the next day. Spoon a little bit on top of 'Scoops' tortilla chips, sprinkle some cheese, and top with sour cream :)
