Loaded Ranch Potato Casserole

This turned out to be another hit with the family. It paired well with the Buffalo Chicken wraps we had, and is a nice alternative to the usual, boring side dishes. 


Ingredients:
3-4 Large potatoes
Dry Ranch mix
Shredded chedder cheese
Bacon
Butter
Sour Cream
Chives (Optional)


1) Cut potatoes into large cubes (you may peel them before hand if you dislike the skin)




2) In a large bowl, mix about 1/4 cup Olive oil, with about 1/4 cup Dry Ranch seasoning mix (You may need to add more oil and/or more ranch...you want it to completely coat all potatoes)














3) Toss potatoes in mix and evenly coat
 5) Cover with foil and Bake @ 425 for about 1 hour, stirring occasionally. Uncover and cook for an addional 30 mins or until potatoes are soft on the inside,crispy & brown on the outside.

6)  Remove from oven & top with 1 cup of cheese, and crumbled Bacon


7) return potatoes to oven and bake for 15 mins, or until cheese is golden. 

 
You can serve this topped with sour cream.
